Baking all kinds of treats is a crucial part of Christmas! I have already baked carrot cake and gingerbread, but I decided it was time to try something new. I did not have to search far; because of my language studies, new suggestions introduced me to this Austrian treat called Linzer torte!
As is my way of doing things, I decided to find a Finnish recipe; that way I will not get an authentic result, perhaps, but that way also someone else has adapted the recipe so that I have it easy to get the local products to use in the recipe. This time, I decided to use this.

Linzer
- 200 g butter or margarin
- 1,5 dl sugar
- 2 egg yolks
- 3 lemons’ zest
- 1 tbsp vanilla sugar
- 2 dl almond flour
- 4 dl wheat flour
- A bit of salt
- Jam
- Whip the room-temperature butter and sugar.
- Whip the egg yolks one by one into the mixture.
- Add lemon zest and vanilla sugar.
- Add both flours and mix well.
- Add a little bit of salt.
- Wrap it in the plastic wrap and cool it down in the fridge for at least three hours.
- Use a rolling pin on the cooled-down batter. Use a drinking glass or a cookie cutter to make cookies. Cut a hole in half of the cookies (with a gingerbread mould, for example). Fill with jam and layer the cookies.
- Bake at 175°C for 8–10 minutes.

The batter was easy enough to make, and making cookies is always so much fun. But then, I immediately noticed, when I started shaping these, that this was definitely not for me. I have zero patience, and I broke half of the cookies right before I managed to layer them! So there is no need to bake these for the guests or for the workplace!
I am just joking. I found the way to make these presentable: create the cookies without the window. Of course, they do not look as fancy, but at least they are tidy. So my advice is that if you do not have a Linzer mould, just put the jam inside the cookies!
